No charges for waiter who served allergic man salmon

Simon-Pierre Canuel was in a coma for two days after eating salmon.

The 22-year-old waiter who served a man salmon tartare at a Sherbrooke restaurant in May will not face criminal charges.

That waiter was arrested in August and ordered to appear in court at a later date, with police recommending charges of criminal negligence.

It stems from an incident at Le Tapageur restaurant in May.

Simon-Pierre Canuel said he told the waiter he was allergic to salmon, and then ordered beef tartare.

Instead, he was served a plate of salmon tartare, which he did not recognize as fish until taking several bites.

Canuel went into cardiac arrest, was in a coma for two days, and spent weeks in hospital.

Last month police said their investigation showed the waiter had not taken any notes, about the life-threatening allergy.

René Verret of the DPCP said the Crown's analysis showed no crime had been committed.
