The Showstopper Porchetta Stack

Serves: 4

Ingredients:

• Half loaf focaccia bread or any whole crusty loaf, split horizontally through centre
• 1 batch Pistachio Salsa Verde (instructions below)
• 2 cups lightly packed PC Arugula
• 4 slices PC Provolone Sliced Cheese
• 3 cups sliced cooked PC Porchetta
• 1 Tbsp PC Canola & Olive Oil blend

Directions:

1. Spread salsa verde on the inside of the top half and layer with arugula, cheese, and porchetta. Sandwich with bottom half of bread. Brush with some oil.
2. Brush large non-stick skillet with oil; heat over medium. Add sandwich (upside down); cook, flattening with bottom of another skillet, turning once, until golden. Cut into quarters.

Pistachio Salsa Verde

1. Pulse 1/3 cup shelled PC Blue Menu Unsalted California Pistachios, 2 cloves peeled PC Organics Garlic and 1 tsp salt in mini food processor.
2. Add ½ cup each fresh mint and fresh parsley, 1 Tbsp red wine vinegar, and ½ tsp red pepper flakes; pulse to chop.
3. Gradually add 1/3 cup PC Splendido Cold-extracted Extra Virgin Olive Oil, pulsing to pesto-like consistency.
