Sweet Potato Stacks Recipe

Registered dietitian Laurie Barker Jackman shares a tasty recipe for sweet potato stacks.

Fills 12 muffin cups

Ingredients:

• 3 sweet potatoes
• ¼ cup olive oil
• 2 Tbsp fresh thyme, chopped
• 2 tsp garlic, chopped
• Salt and pepper to taste

Directions:

1. Preheat oven to 400.
2. In a large bowl, combine oil, garlic, thyme, salt and pepper.
3. Wash, peel and slice sweet potatoes into uniform coins.
4. Toss sweet potatoes into oil mixture and stack into muffin tins.
5. Bake at 400 for 40 minutes or until done. Sweet potatoes should be tender with golden, crispy edges.
