Grilled Peach and Whipped Feta Bruschetta

Chef Ben Kelly shares his recipe for grilled peach and whipped feta bruschetta.

Serves: 8–10 pieces

Prep Time: 10 minutes

Cook Time: 5 minutes

Ingredients:

• 3–4 ripe peaches, halved and pitted
• 1 baguette (or gluten-free loaf), sliced into ½-inch slices
• Olive oil, for brushing
• Fresh basil leaves, for garnish
• Balsamic glaze, for drizzling

For the Whipped Feta:

• 200g (about 7 oz) feta cheese
• ½ cup Greek yogurt
• 2 tbsp olive oil
• 1–2 tsp honey
• Zest of 1 lemon

Directions:

1. In a food processor, combine feta, Greek yogurt, and olive oil. Blend until smooth and creamy, about 1–2 minutes. Add honey and lemon zest, blend again. Taste and adjust sweetness if desired. Transfer to a bowl, cover, and chill until ready to use.
2. Heat grill or grill pan to medium-high. Brush peach halves and bread slices lightly with olive oil. Place peaches cut-side down, grill for 1–2 minutes until grill marks appear.Grill bread slices for 1 minute per side until lightly toasted. Slice grilled peaches into wedges.
3. Spread whipped feta generously over grilled bread. Top with peach wedges. Drizzle with balsamic glaze and garnish with fresh basil leaves.
