Chris Brothers Cozy Ham Soup

Ingredients:

• ½ onion diced (even if you don’t like onions, the flavour blends so well, you won’t even know they’re in the soup!)
• 3 spoonful’s of butter
• 3 cups diced potatoes (give or take, I used about 3-4 medium sized potatoes)
• 3 cups chicken broth
• 2 ½ cups diced Chris Brothers Smoked Boneless Ham
• Carrots chopped
• 1-2 pieces of diced celery
• Garlic to taste, I used about 1 teaspoon
• Chopped parsley to taste, I used about 1-2 teaspoons
• Dried thyme leaves (I used fresh dried thyme from our garden, it was so good!)
• black pepper to taste
• 1 cup Blend Cream (or if you want the soup to be much less thick, feel free to use 3.25% milk, personal preference)
• 1 tablespoon cornstarch mixed with water to thicken the soup

Directions:

1. Put a large soup pot on the stove and add your onions and butter – cook on medium heat for about five minutes or so.
2. Now add your potatoes, chicken broth, Chris Brothers Smoked Boneless Ham, carrots, celery, garlic, parsley and thyme. Mix all together and bring heat up so that the soup begins to boil. Cook for about 20-30 minutes until the potatoes begin to soften. Use a potato masher to achieve your preferred potato texture for the soup.
3. Add the blend in now and simmer over low to medium heat for about five minutes. If you’d like the soup to be a little thicker, add the cornstarch and water mix, and stir for a few minutes.
4. Serve with sour cream, Greek yogurt or cheese if you’d like to add an extra layer of flavour.
5. Pair with a sandwich to complete your meal, such as Chris Brothers Smoked Meat.
