Baked Brie with Nova Scotia Apples

Chef Stephen Barrett shares a recipe for baked brie featuring local apples.

Serves four

Total time: 30 minutes

Ingredients:

• 1 wheel of brie cheese
• 8 sheets of phyllo pastry
• 2 tbsp of butter
• 4 Nova Scotian apples
• 1 tbsp of honey or maple syrup
• 1 baguette to serve

Directions:

1. Let phyllo sheets thaw overnight.
2. Preheat oven to 400.
3. Melt 2 tbsp of butter in microwave-safe container in microwave.
4. Place phyllo sheets on counter one at a time and brush with melted butter. Layer another sheet on top and repeat the process until all sheets are used.
5. Place wheel of brie in middle of phyllo sheets and top with sliced apples and honey.
6. Wrap cheese and fruit with pasty and put on baking sheet. Bake for 15 to 20 minutes or until crispy and brown. Serve with baguette or crackers and more fruit or jam.
