Asparagus Pasta

Chef Stephen Barrett shows how to make his recipe for pasta with asparagus and pancetta.

Ingredients:

• 1 bunch asparagus
• 200 gm pancetta
• 2 garlic cloves
• 1 lemon
• ½ cup parmesan cheese
• 1 package spaghetti
• 2 tbsp olive oil
• 1 tsp red pepper flakes
• Salt and pepper to taste
• Burrata and basil (optional)

Directions:

1. Bring a large pot of water to a boil and cook pasta to desired doneness.
2. In a pan heat 2 tbsp olive oil to medium high.
3. Add diced pancetta and cook until crispy.
4. Add ½ cup pasta water.
5. Add asparagus and cook until bright green. Add garlic, salt, pepper, and lemon.
6. Remove from heat and add cooked spaghetti.
7. Top with parmesan cheese, burrata, and basil.

Serve and enjoy.
