Egg Cloud, a new cafe in London Ont., is known for its viral “Egg Cloud Sandwiches,” inspired by authentic Korean-style egg drop sandwiches. “We saw in London that there were not another high protein and healthy option,” said Aarushi Chhabra, owner of Egg Drop. “That’s when we came out with our own version of egg sandwiches.” Chhabra said the sandwiches are made with preservative-free egg milk bread and cloud eggs. “They’re made on slow flame in a pan instead of cooking together on a grill,” said Chhabra. “That’s Japanese style.” Chhabra said she has been overwhelmed by the community’s support online. “I’m really proud of our product,” said Chhabra. “I’m happy to see that people are enjoying it and seeing it going viral.” She said she thinks the sandwiches have gained traction on social media because they are “visually appealing” and “taste great.” “The sandwiches look too beautiful to not go viral,” said Chhabra.
