*Note: Tofu can replace some (or all) of the chicken in this recipe if desired. Slice extra firm or firm tofu block into approximately 1/3” slabs. Use paper towels to blot out as much moisture as you can. Pan fry in oil on both sides over medium to medium-high heat until heated through and outsides are a little golden brown. Pan fried tofu pieces are a perfect vehicle to enjoy that tasty ginger apricot sauce too!
