Turkey Caesar Sammie

Ingredients:

  • 2 English muffins or Whole-wheat bun
  • 2 leaves romaine lettuce
  • 2 cups chopped skinless leftover turkey (white meat)
  • 1/4 cup mayonnaise
  • 1 /2 tsp lemon juice
  • 2 tsp. grated parmesan
  • Pinch of parsley
  • cracked pepper

Directions:

Mix turkey, mayonnaise, parsley, lemon juice and parmesan. Add lettuce and stuff between two slices of bread. Makes 2 portions.

Prepare ingredients that require a little extra effort ahead of time or on the weekends when you're less busy and keep them in the fridge to use all week.

Savoury Pita Pockets

  • 2 pieces pita bread
  • 2 Tbsp. mayonnaise
  • 2 Tbsp. grated white low-fat cheddar cheese
  • 1/4 cup chopped red pepper
  • 1/4 cup chopped lettuce
  • 1/4 cup chopped tomato
  • 1/4 cup chopped favourite vegetable (optional)
  • 4 basil leaves (optional)

Directions:

Mix the mayonnaise and cheddar cheese. Spread the mixture on inside of pita pocket. Stuff pita with red pepper, lettuce, tomato, basil leaves (if desired) and one more vegetable of your choice (if desired). Makes 2 portions.

Have fun with DIY lunches. Consider packing ‘deconstructed' sandwiches that can be assembled at work or school by keeping ingredients in separate re-usable containers at home. Not only is this a great way to ensure ingredients are in great shape by lunchtime, but it also gives kids a chance to help create their own lunches.

Surprise yourself. Adding unexpected ingredients can make an otherwise basic sandwich exciting. Some of Chuck's favourite ingredients include kim chi, spicy antipasto mixed vegetables, fresh herbs, oven-dried tomatoes, seasoned mayonnaise, and romaine lettuce.
